Inspired by Watatsumi, the god of the sea in Japanese mythology, this sake embodies the ocean’s vastness and bounty. Watatsumi is built upon a junmai brewed in the traditional yamahai method, blended with a crisp, dry junmai, a rare black-koji junmai aged for 17 years, and a high-acidity junmai aged for 8 years.
The result is a sake that is at once complex and elegant: aromas of fino sherry and dried fruit intertwine with subtle caramelized sugar and umami reminiscent of kombu. On the palate, it reveals a soft mouthfeel, with sweetness balanced by bright citrus nuances and a transparent, refined finish.
Watatsumi transforms across temperatures — from its crisp, citrus-tinged profile when chilled, to a silky, lingering sweetness when warmed. Its versatility makes it an ideal companion not only to seafood classics such as meunière or bouillabaisse, but also to richer dishes like fricassée or mushroom potage.
Crafted through the expertise of Fukumitsuya, a Kanazawa brewery founded in 1625 with nearly 400 years of sake-making history.
