A blend where tradition and innovation converge
To accompany a wide range of cuisines, we offer two expressions: OGATA SAKE Watatsumi, inspired by the sea, and OGATA SAKE Yamatsumi, inspired by the mountains.
Each bottle is wrapped in waxed paper that reflects the hue of the sake within. On the reverse of the label, illustrations of the sea and the mountains emerge, evoking the landscapes that define each expression.
OGATA SAKE Watatsumi
Watatsumi, the sea deity of Japanese mythology, has long been revered as a guardian of safe voyages and abundant harvests, a presence that bestows the blessings of the ocean.
Inspired by the sea, OGATA SAKE Watatsumi is built around a yamahai-style junmai sake, blended with a long-aged junmai brewed using rare black kōji, highly uncommon in sake production, alongside a dry junmai sake.
Rich aromas reminiscent of dried fruit and dry sherry unfold into a palate marked by a gentle sweetness and subtle bitterness. Pale yellow in hue, it offers a smooth mouthfeel and a deep, layered body, finishing with lingering umami evocative of kombu.
When served chilled, a lightness reminiscent of ripe citrus emerges beneath its umami. Served warm, the acidity softens, allowing a gentle sweetness to unfold.
With a clear, balanced profile where umami harmonizes with the refreshing acidity derived from black kōji, it pairs naturally not only with fish dishes such as meunière and bouillabaisse, but also with fricassée and potage-style soups.
OGATA SAKE Yamatsumi
Yamatsumi, the mountain deity of Japanese mythology, has long been revered as a guardian of natural cycles and agricultural abundance, a presence that bestows the blessings of the land.
Inspired by the mountains, OGATA SAKE Yamatsumi is built around an exceptionally rare, long-aged junmai sake matured for over thirty years, resulting in a deep, rounded profile. This core is blended with an aromatic, elegant daiginjo and several distinctive aged sakes from different vintages.
Layered over an aged bouquet with the depth of Amontillado are notes of Pinot Noir–like fruit, citrus-driven acidity, and a gentle bitterness.
When gently warmed, spicy aromatics rise, followed by a lingering interplay of umami and acidity. Served hot, deeper umami reminiscent of miso and dashi comes to the fore, alongside a generous, fig-like fruitfulness.
Both rich and refined, this sake offers a beautifully balanced profile, pairing naturally not only with meat dishes such as beef, duck, and wild boar, but also with richly flavored dishes incorporating cheese.
Chilled sake glass
To further enhance the distinct character of each OGATA SAKE, we have designed two types of chilled sake glasses. Each glass is hand-blown individually by skilled artisans.
We also offer a gift set in which one bottle of OGATA SAKE and one chilled sake glass are housed together in a paulownia wood box, making it a refined choice for gifting.
