Taking its name from Yamatsumi, the mountain deity of Japanese mythology, this sake honors the fertility and blessings of the land. At its heart is a junmai aged for over 30 years, blended with a fragrant daiginjo and multiple aged sakes of varying vintages, creating remarkable depth and balance.
Yamatsumi offers a full-bodied yet refined expression: amontillado sherry-like notes meet layers of nutty richness, dried fruits, and hints of rhubarb and citrus. Pinot Noir-like fruitiness and a gentle bitterness add further complexity. When warmed, spicy and umami notes reminiscent of miso and dashi emerge, while served hot it reveals a rounded completeness with fig-like sweetness and enduring structure.
Versatile in pairing, Yamatsumi complements robust flavors such as red meats (beef, venison, duck) and cheese-driven dishes, as well as richly flavored cuisines beyond Japan.
Crafted through the expertise of Fukumitsuya, a Kanazawa brewery founded in 1625 with nearly 400 years of sake-making history.
